Skillet Sausages Apples (Organic Sausage Recipe)

Serves 4

Braeburns or golden delicious are the perfect apples for this dish because they hold their shape when cooked, are just sweet enough, and never too tart. Calvados is an apple-flavored brandy from the Normandy region of France. But if you like you can use Applejack as a delicious substitute.

    Apples (Braeburns or golden delicious)
Calvados Brandy (use Applejack as a substitute)
    Butter
    Fresh sage
Salt and freshly ground black pepper
4 tablespoons extra-virgin olive oil
8 Applegate Farms Organic Chicken & Apple Sausages
3–4 apples, peeled, quartered, cored, and each quarter halved crosswise
1/2 cup calvados
4 tablespoons butter
2 tablespoons chopped fresh sage
Salt and freshly ground black pepper

Heat the oil in a large skillet over medium heat. Add the sausages and cook until browned all over, about 5 minutes. Transfer the sausages to a plate and set aside. Add the apples to the skillet and cook, turning them as they brown, until they are tender but still hold their shape, about 10 minutes. Return the sausages to the skillet with the apples. Add the calvados, butter, and sage. Cook, shaking the skillet over the heat, until the butter melts and the sauce is bubbling, 2–3 minutes. Season to your taste with salt and pepper.
