Roast Beef Sandwich Recipe with Horseradish Mayo

HORSERADISH AND ROAST BEEF are fast friends. Rolled up together they are a flavorful classic. If you find yourself short on pumpernickel spread the roast beef slices with the horseradish cream cheese, roll up the slices, cut into pinwheels and skewer with a toothpick.

    Dill pickle
    Salt and freshly ground black pepper
2 tablespoons prepared horseradish
1 4 oz. package of cream cheeses, softened
2 tablespoons chopped chives
Salt and freshly ground black pepper
8 slices pumpernickel
1 7-oz. package Applegate Farms Roast Beef
Chopped dill pickle

 

Mix together the horseradish, cream cheese, half of the chopped chives, and a pinch of salt and pepper. Spread the horseradish-cream cheese edge to edge on the slices of pumpernickel. Quarter the bread into triangles. Cut the roast beef slices in half and arrange on the bread. Garnish with a good grinding of pepper, some pickle and remaining chopped chives.
