1 ½ pounds Applegate Farms Peppered Eye Round
1 ½ pounds Roast Beef (thinly sliced)
1 large Vadalia onion
4 Bell peppers (any color)
4 tbs. of extra virgin olive oil
(to taste) salt and pepper

Applegate Farms Provolone Cheese
4 - 6 hoagie rolls
- Peel and halve onion, slice paper thin.
- Halve the peppers, remove seeds and slice into thick wedges.
- In a large skillet over low heat, heat 2 tablespoons of olive oil.
- Add onions and cook 8 to 10 minutes until softened, stirring frequently.
- Transfer onions to small bowl and set aside.
- Add peppers to the same skillet and cook over low heat for 10 to 12 minutes until tender.
- Transfer to bowl with the onions and season to taste with salt and pepper.
- Cover with foil to keep warm and set aside until needed.
- In a large, clean skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
- Cook the beef in 2 batches until lightly browned, adding more olive oil if necessary.
- To assemble sandwiches, line hero rolls with cheese and place beef and onion and pepper mixture on top.
