Sausage with Apples

Pan Grilled Sausage with Apples and Onions (organic sausage recipe)

    Small onion
    Granny Smith Apple
    Apple cider
    Chicken broth
    Sage
    Lemon juice
3 tbs. butter, divided
4 Applegate Farms Chicken & Apple Sausages
1 small onion, minced
1 Granny Smith Apple. peeled, sliced
1/2 cup apple cider
1/2 cup chicken broth
1 tbs sage, chopped fresh
1 1/2 tsp lemon juice, fresh

 


  1. Preheat oven to 400ºF.
  2. Melt 1 tbs of butter in a large skillet over medium heat. Add sausages and cook until brown, turning occasionally, about 5 minutes.
  3. Remove sausages from skillet and transfer to a heat-proof dish. Cover with foil and place in oven to keep warm.
  4. Add onion and apple to pan; cook until onion and apple are tender and brown, stirring often, about 5 minutes.
  5. Add apple cider and chicken broth; increase heat to high and stir until liquid is reduced and thickened slightly, about 2-3 minutes. Stir in lemon juice.
  6. Season to taste with salt and pepper. Remove sausages from oven and transfer to serving platter. Remove pan from heat. Whisk sage and remaining 2 tsp. butter into cider mixture. Drizzle over sausage and serve.

Loved this!!! I added some cubed, cooked & browned butternut squash, onions and a bit of cayenne. One dish meal that my husband and I really enjoyed.

Fantastic - Big Hit with the whole family - always guest will ask for the recipe. For a second dinner I have changed it up a little to make an "old new recipe" Using Applegate's organic chicken & apple sausage sliced thin - I add to the pan, 1/2 of an organic apple (sweet variety) per person and, a 1 cup of organic sauerkraut per person, and finally 1 cup of water. Warm it through. Water will evaporate & slight browning takes place for beautiful visual effect on everything in the pan, about 5 minutes. Round out the dinner with small organic boiled beats (wash, boil an hour and peel like hard boiled egg) 1 per person, beat greens (the tops of your beats) sauteed in olive oil with organic pine nuts and organic raisins about 15 minutes.

It's apple season so I doubled the amount of them. Don't let the apple juice evaporate b/c it really adds to the flavor especially since I served it with pasta.
