Organic Lentil Soup Recipe (with Kale & Sausage)

Serves 2 - 4

    Olive oil
    Garlic
    Small onion
    Carrots
    Chicken broth
    Lentils
    Tomato paste
    Kale
    Balsamic vinegar
Applegate Farms Organic Sausages (your choice)
1 tbs. olive oil
3 cloves garlic, minced
1 small onion, minced
2 carrots, peeled, small dice
4 cups chicken broth
1 cup lentils
2 tbs. tomato paste
3 cups kale
1 1/2 tbs balsamic vinegar

 

  1. Heat oil in a large heavy pot over medium-high heat.
  2. Add sausage, stirring occasionally until browned.
  3. Add onion and carrot and saute until softened.
  4. Add garlic and stir until fragrant (about 20 seconds), being careful not to burn it.
  5. Add chicken broth, scraping up any browned bits on the bottom of the pot..
  6. Add lentils and tomato paste, lower heat and simmer, covered, for about 40 minutes.
  7. Add greens and simmer (about 5 minutes), uncovered, until greens and lentils are tender.
  8. Add balsamic vinegar and season to taste with salt and pepper.

Perfect for rainy day June 13, 2011

This is a preview, because I haven't made it yet, but I just wanted to say it sounds perfect for the soggy chilly weather we're having this June. I happen to have a pack of Applegate organic chicken/turkey sausages at home, and some lentils, so look out family: here comes a tasty tasty soup with bread and a glass of red wine for dinner tonight!
