Organic Burritos Recipe

    Ground Cumin Seed

    Burrito Tortillas
1 12 oz. package Applegate Farms Organic Fire Roasted Sausage
8 slices Applegate Farms Farmhouse Cheddar
5 oz. Organic Black Beans, rinsed & drained
1 cup defrosted Organic Sweet Corn Nibblets
1 cup Muir Glen Organic Medium Salsa
1/4 tsp. Ground Cumin Seed
1/4 tsp. Sea Salt
8 Burrito Tortillas

 

  1. Mix beans, sweet corn, salsa and cumin and salt together in a bowl.
  2. Put approx. 1/3 of a cup of filling in the center of each tortilla.
  3. Split the sausages in half lengthwise and slice the halves into approx. 1/8 inch slices.
  4. Place slices of sausage on top of the filling.
  5. Lay a slice of Applegate cheddar on top of sausage.
  6. Wrap burrito by bringing one end over the top, then both sides over the top, and finally folding the burrito over on top of the last edge, so the weight of the burrito holds the ends closed.
  7. Place in a 400°F pre-heated oven and bake for 10 to 12 minutes.
  8. Take out and serve with your favorite salsa, guacamole or roasted pepper coulis.

These burritos can be heated on the grill or over the campfire. In the summer I've added cooked squash and peppers. I've even just heated the filling and served it with rice or pasta. For a little more heat make it with Applegate Farms Andouille Sausage.
