Classic Sandwich

Grilled Sausage Sandwich Recipe with Organic Cheese

    Onions
    Balsamic vinegar
    Crushed red pepper
    Dark brown sugar
    Applegate Farms Organic Sausages (your choice)
    Sandwich bread
    Dijon mustard
    Butter
    Applegate Farms Sliced Cheese
1 tbs. olive oil
1 lb. onions, thinly sliced
1 1/2 tbs balsamic vinegar
1/2 tsp. crushed red pepper
1 tbs. dark brown sugar, packed
6 Applegate Farms Organic Sausages
(your choice)
8 slices sandwich bread (any kind)
4 tsp. Dijon mustard
6 tbs. butter, softened
8 oz Applegate Farms Sliced Cheese
(your choice)

 

  1. Heat oil in large, heavy skillet over medium-high heat.
  2. Add onions and sauté until softened, about 5 minutes.
  3. Stir in vinegar and sugar. Reduce heat to medium-low and cook until onions are soft and dark brown, about 20 minutes.
  4. Season to taste with salt and pepper. (Can be prepared up to 2 hours ahead. Hold at room temperature. Rewarm over low heat before using.)
  5. Preheat broiler. Brush large metal baking pan with oil. Place sliced sausages in pan. Broil until sausages are brown and crisp, about 5 minutes per side. Sausages may also be grilled over medium-high heat.
  6. To assemble sandwiches, place 4 slices of bread on work surface. Top each slice with one ounce of cheese.
  7. Place 3 sausage halves on each slice, and spread 1 teaspoon of mustard on top of sausages. Top sausages with caramelized onions, dividing equally. Cover with remaining cheese slices, dividing equally. Finish with remaining 4 bread slices. Spread half of butter over upper bread slices.
  8. Heat large nonstick skillet over medium-low heat, or electric griddle on medium. Carefully invert sandwiches, buttered side down, onto skillet or griddle. Cook until bottoms are brown, about 3 minutes. Spread remaining butter over upper bread slices. Turn sandwiches, and cook until bottoms are brown, about 3 minutes longer.
