Note: We use all organic ingredients when possible.

Applegate Farms Organic Andouille,
cut into ½" pieces (use
Organic Kielbasa instead for a more mild flavor)
1 cup organic vegetable oil
1 cup organic flour
2 large organic onions, chopped
2 organic bell peppers, chopped
4 ribs organic celery, chopped
4-6 cloves organic garlic, minced
4 quarts organic chicken stock
2 organic bay leaves
2 tsp. Creole seasoning, or to taste
1 tsp. dried organic thyme leaves
2 lbs. of peeled organic shrimp
2/3 cup fresh chopped organic parsley
1 bunch organic scallions (green onions), tops only
Chopped Salt and freshly ground black pepper to taste
Brown the sausage and set aside.
In a large, heavy pot, heat the oil and cook the flour in the oil over
low heat, stirring constantly, until the roux reaches a reddish-brown
color. Add the vegetables and stir quickly. Continue to cook, stirring
constantly, for about 4 minutes. Add the stock, seasonings, and
sausage. Bring to a boil, and simmer for about one hour, stirring
occasionally. In the last 10 minutes add the shrimp. Add the chopped
scallions and parsley, and heat for 5 minutes. Serve over rice in large
shallow bowls. Accompany with a good beer and lots of hot, crispy
French bread.
