Easy Organic Gumbo Recipe

    Applegate Farms Organic Andouille or use Applegate Farms Organic Kielbasa instead for a more mild flavor
    Organic vegetable oil
    Organic flour
    Organic onions
    Organic bell peppers
    Organic celery
    Organic garlic
    Organic chicken stock
    Organic bay leaves
    Creole seasoning
    Dried organic thyme leaves
    Organic shrimp
    Fresh organic parsley
    Organic scallions
    Salt and freshly ground black pepper
Note: We use all organic ingredients when possible.

2 packages Applegate Farms Organic Andouille,
cut into ½" pieces (use Organic Kielbasa instead for a more mild flavor)
1 cup organic vegetable oil
1 cup organic flour
2 large organic onions, chopped
2 organic bell peppers, chopped
4 ribs organic celery, chopped
4-6 cloves organic garlic, minced
4 quarts organic chicken stock
2 organic bay leaves
2 tsp. Creole seasoning, or to taste
1 tsp. dried organic thyme leaves
2 lbs. of peeled organic shrimp
2/3 cup fresh chopped organic parsley
1 bunch organic scallions (green onions), tops only
Chopped Salt and freshly ground black pepper to taste

 

Brown the sausage and set aside. In a large, heavy pot, heat the oil and cook the flour in the oil over low heat, stirring constantly, until the roux reaches a reddish-brown color. Add the vegetables and stir quickly. Continue to cook, stirring constantly, for about 4 minutes. Add the stock, seasonings, and sausage. Bring to a boil, and simmer for about one hour, stirring occasionally. In the last 10 minutes add the shrimp. Add the chopped scallions and parsley, and heat for 5 minutes. Serve over rice in large shallow bowls. Accompany with a good beer and lots of hot, crispy French bread.
