If only it was sugar/dextrose free! January 23, 2012

Your genoa salami has always been one of my favorite meats for parties, since it is so superb with wine and cheese. Now that I've had to go totally sugar-free, though, I can't have this one any more -- but if y'all ever come out with a sugar-free version of Genoa Salami, I would probably eat nothing but Applegate meats for the rest of my life.

This Salami has a nice smooth fatty texture complimented with great seasoning and tang. This is close to the best Genoa I have eaten. Thanks for writing in Annie. Please know normally green iridescence is normal because meat contains iron, fat, and other compounds. There are various pigments in meat compounds that can give it an iridescent or greenish cast when exposed to heat and processing. Iridescence does not represent decreased quality or safety of the meat. Saying that bad odor or texture does not sound normal. Please be in touch at 866-587-5858 so we can work this out for you!

I never write reviews, but felt compelled to comment on this product. We used to live in France and would cross over into Italy to buy cold cuts in the Val d'Aosta (just on the other side of the Mont Blanc tunnel). I loved the salami we would find in that area and yours is the only thing I've found since our return home that has replicated that specific flavor. Please don't change a thing.

Great, but packaging and storing March 23, 2011

I am really impressed by the quality and taste of the organic genoa salami. And it got even better after I realized how sustainable the production is. Coming from Germany I was looking for meat products I could trust, and I believe I found it! Anyway, I have one major point of criticism. If you store it in the original packaging after opening, apparently there is no way to exclude air, so the taste vanishes quickly and all you are left with is a fatty, bad taste. Of course you can use reusable containers at home, but why not have a resealable packaging? Again, the salami itself is just great!

Hello Delia C! Glad to hear you like the great taste and sorry to hear about your experience with a coating. Please know our Sliced Organic Genoa Salami pre-packaged doesn’t have a coating/casing. The only thing I can think of is that if you bought it freshly sliced at the deli that they didn’t take off the shell before they sliced it! We hope next time you won’t have to deal with any plastic strips and to simply enjoy the “excellent blend of fat, meat and spices” as you say!

The Genoa salami has a great taste -- excellent blend of fat, meat, and spices. However, I can't get over the hard plastic coating -- it's impossible to eat it in sandwiches because the plastic strip around each slice refuses to break without a hard tear.
