Leaner in Summer, Fattier in Winter January 3, 2012

Dear Lisa, Our pork comes from pigs that have been raised humanely. As part of the natural cycle, pigs are generally leaner in the summer and a bit fattier in the winter months. Conventional products are raised in temperature controlled areas and are fed additives that make this balance consistent. Since we do not use any of those methods and only grow them natural this is an added effect.

I love Applegate products, and we've been loyal customers for years. The Natural Sunday Bacon is a favorite, but, for the past month or so, each package has been so fatty. I love knowing that the product is nitrate-free & gluten-free, but I don't want to pay for fat!

This is in my opinion the best commercially available "humane" bacon out there. Flavor and crispiness are excellent. The price is higher than most, which is probably good, otherwise I’d be tempted to eat it more than just every other Sunday. I wish there was a thicker version out there.

Applegate ... Sunday Bacon is better than any other natural or organic bacon I have pruchased. It lays flat, fries evenly and has less fat. We like the flavor. Great in BLTs. Other brands are thicker, &G fat parts are not done when lean is well done. Too much fat in total. Recently 'Sunday Bacon' has not been available where I always shop!

I have been buying a local store brand of naturally cured bacon. For some reason, as it cooks, it releases vapors that cause me to choke and have difficulty breathing. That CAN'T be good! I was very pleased to discover that this does not happen with Applegate Farms bacon. And the taste of the Applegate bacon is also far superior - less salty and a delicious flavor. Worth the extra money, not to mention the 45 minute drive to the health food store to purchase it.

Celery, Nitrates & Nitrites March 4, 2010

We’ve heard that some suppliers of celery juice—which is used in the process of natural meat curing— have grown their celery in over-fertilized fields, causing concern about increased level of nitrates in food. Our celery suppliers practice sustainable crop rotation, do not over-fertilize, and at best, add properly composted manure to the soil before planting. Our celery suppliers alternate their fields between celery and legumes, creating a bio-dynamic relationship wherein each crop naturally contributes nutrients to the other. The starter culture used naturally converts celery’s nitrates to nitrites, the preservative that inhibits the growth of bacteria and microbials, such as botulism, in food. Very little celery juice is used in our products, resulting in low amounts of nitrites – much lower than commercial products. Finally, pathogens are controlled not only by the presence of nitrites, but through proper sanitation, pH control, and heating/cooling techniques.

Best Bacon Ever February 13, 2010

I'd been buying this bacon for a while, and then my grocery store stopped selling it. I tried another brand and it was disgusting, burning in the pan and not having the same delicious bacon flavor as this brand. I don't know what it is, but this bacon is the best ever.
