¼ cup vegetable oil
3 cups Napa cabbage, finely shredded
¾ cup carrot, finely shredded
1 ½ Tbsp. soy sauce
¾ cup scallions, thinly sliced
2 Tbsp. cilantro
42 wonton wrappers
1 package Applegate Farms the Greatest Little Organic Smokey Pork Cocktail Franks

Heat 1 tablespoon oil in large skillet over med-high heat. Add cabbage and cook until wilted. Add carrots and soy sauce and cook about 5 minutes until moisture evaporates. Remove from heat, stir in scallions and cilantro and allow to cool completely. To Assemble Wontons: Place a wonton wrapper on work surface with a corner pointing toward you.  Dab corners with water. In the center of each wonton, place a teaspoon of the vegetable mixture and a cocktail frank. Bring left and right sides of wonton to center and overlap. Bring bottom of wonton wrapper toward center and roll enclosed mixture tightly toward the top. Fill a 12” non-stick skillet with remaining oil and heat over medium-high heat. Pan fry wontons until golden on each side (about 2-3 minutes per side). Serve with sweet and sour sauce.
