3 bars 75% Kallari Chocolate*, broken up into small pieces
½ cup heavy cream
½ cup coffee or water
Pinch salt
Combine all ingredients in a heatproof bowl. Place bowl over a saucepan of about 2-inches of gently simmering water. Make sure water does not touch bottom of bowl. Stir with a wooden spoon until smooth. If thinner consistency is desired, add additional coffee or water.
Remove from heat. Serve warm. If not using immediately, cool to room temperature. Transfer to glass jar with airtight lid and refrigerate. Reheat sauce over low heat before serving. Sauce can be refrigerated up to 1 month.
