We just started getting this bacon when they began selling it at our local supermarket and we love it! I love that the majority of it is actually meat - rather than other leading natural or regular brands where 90% is just fat. We have happily switched our weekend treat to Applegate!

Nitrates Explained August 5, 2010

When you eat any Applegate products with celery juice added, you are consuming the exact same nitrates found in vegetables and vegetable juices, only at much lower levels. These naturally occurring nitrates are not a health risk to humans. Spinach may contain 500 to 1,900 parts per million of nitrate, which is much higher than that found in any cured meat product, compared to the reported 46 ppm found in Applegate Bacon. You would have to eat approximately 800 hot dogs to consume the same parts per million of nitrates found in an 8 oz glass of vegetable juice. Nitrates dissipate over time in meat products. Because Applegate produces their products more often, the supply chain always has the very freshest Applegate products. Commercial products are made with 120 ppm of chemical nitrites, as required by USDA regulations, they start with much higher levels than Applegate. We can only assume that the other products tested were older products, having time to dissipate.

confused about nitrates August 2, 2010

I have really enjoyed your uncured bacon which I bought specifically to avoid nitrates found in other bacons. I would give it a 5 star rating, but am confused about this product due to this quote from Cook's illustrated (see end of post). Does the cooked product contain nitrate or nitrite? Does ingesting the product result in absorbing nitrate into my body? See quote: "Celery juice naturally contains a high level of organic nitrate, which is converted into the problematic nitrite by the bacteria in the starter culture and also by saliva during chewing. Despite this fact, it’s technically correct to label the bacon “no nitrates or nitrites added,” since the compounds are formed during production, not added as ingredients...And the Applegate Farms Uncured Sunday Bacon averaged more than three times the level of regular bacon: 35 ppm nitrite (and nearly as much nitrate, at 44.3 ppm)." Was looking for the perfect complement for scrambled eggs with chives and chanced upon this at Whole Foods. As a family trying to eat healthy we are always on the lookout for healthy alternatives to our favorite foods. Sunday Bacon does not disappoint in the taste department. Slices were crips and flavorful. At only 60 calories a serving..., I think Bacon may be back at our house!

I live in Indianapolis now and was intrigued because I used to live in Raritan! We tried it and loved it. My 7-yr-old proclaimed it the "best bacon he'd ever had" and he didn't know I had bought something new. That was the real test. We find it at Meijer and appreciate them carrying it. Thanks!

It's so refreshing that your company can make things like bacon without the nitrates. I know this bacon costs a litte more but it's worth it. I feel a lot better that there eating this bacon.
